Treacle Raisin Cake

I bought a bottle of treacle and then wanted to make something that used treacle. I set about reading about treacle and the way it is used in recipes. I discovered this recipe in a book from my daughter’s cookbook collection that was given to her in 1988. I was delighted to find that the cake is easy to make and the finished product is very good. My daughter suggested that adding crushed cashew nuts or almonds would transform this cake from being just energy rich to also flavour rich.

Important warning to diabetics: Do not eat this cake! It has treacle, golden syrup, and raisins, all of which contain dollops of sucrose. Those who are on a weight reduction diet should exercise caution in addition to their other, more physical, exercises when eating this cake because of its high sugar content. This calorie-rich moderate protein dessert is unlike other typical holiday treats due to the treacle flavour, but is still a hit with family and guests.

Ingredients

  • 2 C Maida (Refined Wheat Flour)
  • 125g Unsalted Butter
  • ½ C Treacle
  • ¼ C Golden Syrup
  • ½ C Castor Sugar
  • 1 tsp Baking Soda
  • 2 Eggs
  • 150ml Milk
  • ½ tsp Nutmeg Powder
  • ¼ tsp Cinnamon Powder
  • ¼ tsp Clove Powder
  • Rind of 1 Lemon
  • 1 C Seedless Raisins
  • A small amount of butter for greasing

Method

  1. Preheat the oven to 170° C/325° F.
  2.  Grease a bottom-lined 8 ½”/22 cm baking pan.
  3. Wash the raisins and place them on a kitchen towel to dry.
  4. Sift the flour, spice powders, and baking soda in a large bowl.
  5. Put the butter, treacle, and golden syrup in a small saucepan and heat gently till the butter melts. Stir and allow to cool slightly.
  6. Beat the eggs lightly in a separate bowl.
  7. To the flour mixture, add the eggs, sugar, and lime rind and stir. Add the treacle mixture and beat adding milk gradually till the batter is smooth.
  8. Stir in the raisins.
  9. Transfer the batter to the baking pan. Bake for 1-1 ½ hours or till a cake tester inserted comes out clean.
  10. Transfer to a cooling rack. Remove the cake from the pan after 5 minutes.

Notes

  1. Golden Syrup and Treacle are available on Amazon India.
  2. Before measuring the treacle and golden syrup, grease the measuring cup so that the syrups do not adhere to the cup.
