It is customary to leave cookies for Santa on the night before Christmas. I came across this unusual recipe in a book called 1001 Best Baking Recipes of All Time. I was struck by the unusual list of ingredients like rice flour and cardamom with vanilla. I had never used this combination earlier in cookies. When I baked these, I fell in love with both the unique flavour and texture. So, I thought why not give this to Santa – and by Santa, I mean myself 😀

Cookies are usually considered comfort food and, generally, are high calorific. These are no exception. Therefore, those who wish to avoid a high energy and high carbohydrate diet should stay away from these.
Ingredients
- ½ C Raw Rice Flour
- ½ C Maida (Refined Wheat Flour)
- 1 tsp Baking Powder
- ½ C unsalted Butter + 1 tsp extra for greasing
- 1/3 C White Sugar
- 1 Egg
- ¼ tsp Salt
- 1 tsp Vanilla Essence
- ¼ tsp Cardamom Powder
Method
- Preheat the oven to 350° F or 180° C.
- Lightly grease three cookie sheets with the butter.
- Sift the flours and the baking powder together.
- In a large bowl, mix butter, sugar, and vanilla essence and beat until creamy.
- Add the egg and mix well. Add the flour slowly in small amounts and blend.
- Add cardamom powder and salt and stir.
- Drop spoonsful of the batter on a baking sheet
- Bake the cookies until golden brown
- Store in airtight tins
Note
The cookies will become very soft during storage. Therefore, bake till they are slightly hard.
